Ingredients

Instructions
- Lightly grease an 8-inch springform pan and line the bottom with parchment paper.
- In a large saucepan over low heat, melt the vegan butter.
- Add the vegan marshmallows and stir continuously until completely melted and smooth.
- Remove from heat and stir in the vanilla extract.
- Add the crispy rice cereal and mix gently until fully coated.
- Press the cereal mixture firmly into the bottom of the prepared pan to form the crust layer.
- Drain the soaked cashews and place them in a high-speed blender.
- Add coconut cream, maple syrup, melted coconut oil, lemon juice, vanilla extract, and salt.
- Blend until completely smooth and creamy.
- Pour the cheesecake filling over the cereal crust and spread evenly.
- Freeze for 3 hours or refrigerate for at least 6 hours until set.
- Melt the dairy-free chocolate chips with coconut oil until smooth.
- Drizzle the chocolate over the chilled cheesecake.
- Sprinkle extra crushed crispy rice cereal on top before slicing and serving.
