Description

No-bake vegan chocolate Snickers squares made with dates, almond butter, peanuts, oats, maple syrup, and a rich vegan chocolate topping for a chewy, nutty, candy-style dessert.


Ingredients

  • 1 cup pitted dates (soft and packed)
  • 1/2 cup almond butter (creamy or crunchy)
  • 1/2 cup peanuts (lightly roasted, unsalted)
  • 1/2 cup rolled oats
  • 1/2 cup vegan chocolate chips
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Add pitted dates to a food processor and blend until a thick paste forms.
  2. Add almond butter, peanuts, rolled oats, maple syrup, vanilla extract, and salt. Pulse until combined and sticky.
  3. Line an 8-inch square pan with parchment paper and press mixture firmly into an even layer.
  4. Melt vegan chocolate chips with coconut oil in a saucepan over low heat until smooth.
  5. Pour chocolate over the base and spread evenly.
  6. Freeze for 30 minutes until firm.
  7. Remove from pan and cut into squares before serving.
