Ingredients
- 1 cup pitted dates (soft and packed)
- 1/2 cup almond butter (creamy or crunchy)
- 1/2 cup peanuts (lightly roasted, unsalted)
- 1/2 cup rolled oats
- 1/2 cup vegan chocolate chips
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Add pitted dates to a food processor and blend until a thick paste forms.
- Add almond butter, peanuts, rolled oats, maple syrup, vanilla extract, and salt. Pulse until combined and sticky.
- Line an 8-inch square pan with parchment paper and press mixture firmly into an even layer.
- Melt vegan chocolate chips with coconut oil in a saucepan over low heat until smooth.
- Pour chocolate over the base and spread evenly.
- Freeze for 30 minutes until firm.
- Remove from pan and cut into squares before serving.
Notes
- Use peanut butter instead of almond butter for a stronger Snickers flavor.
