Description

This Strawberry Cinnamon Roll Casserole is a warm and comforting breakfast bake made with soft cinnamon rolls, creamy cheesecake filling, and sweet strawberry pie filling. Finished with strawberry icing, this easy casserole is perfect for brunches, holidays, or cozy weekend mornings.


Ingredients

  • 1 can refrigerated cinnamon rolls with strawberry and cream icing
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 can (21 ounces) strawberry pie filling
  • Nonstick cooking spray

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick cooking spray.
  2. Open the cinnamon rolls and set aside the icing packet for later use.
  3. Cut each cinnamon roll into 6 equal pieces and place them in a large bowl.
  4. In another bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  5. Stir half of the strawberry pie filling into the cream cheese mixture.
  6. Add the cinnamon roll pieces and gently stir until evenly coated.
  7. Transfer the mixture into the prepared baking dish and spread evenly.
  8. Spoon the remaining strawberry pie filling over the top.
  9. Bake for 35 to 40 minutes until the casserole is golden brown and fully cooked in the center.
  10. Allow the casserole to cool for about 10 minutes.
  11. Drizzle the reserved strawberry icing over the warm casserole before serving.
