Description

A soft and hearty gluten-free oatmeal bread with a moist texture and nutty flavor, perfect for a wholesome breakfast or snack.


Ingredients

  • 2 cups gluten-free rolled oats
  • 1 cup oat flour
  • 1/2 cup plain yogurt (or dairy-free)
  • 2 large eggs
  • 1/4 cup olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup milk (or plant-based milk)
  • 1 tablespoon chia seeds (optional)
  • 1 tablespoon flaxseeds (optional)

Instructions

  1. Preheat oven to 180°C (350°F) and grease or line a loaf pan.
  2. Blend rolled oats into a coarse flour.
  3. Mix blended oats, oat flour, baking powder, baking soda, and salt.
  4. In another bowl, whisk eggs, yogurt, olive oil, honey, and milk.
  5. Combine wet and dry ingredients to form a thick batter.
  6. Fold in chia seeds and flaxseeds if using.
  7. Pour batter into pan and let rest for 5 minutes.
  8. Bake for 35–40 minutes until golden and cooked through.
  9. Cool in pan briefly, then transfer to a rack to cool completely.
