Ingredients
- 2 cups gluten-free rolled oats
- 1 cup oat flour
- 1/2 cup plain yogurt (or dairy-free)
- 2 large eggs
- 1/4 cup olive oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon salt
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup milk (or plant-based milk)
- 1 tablespoon chia seeds (optional)
- 1 tablespoon flaxseeds (optional)
Instructions
- Preheat oven to 180°C (350°F) and grease or line a loaf pan.
- Blend rolled oats into a coarse flour.
- Mix blended oats, oat flour, baking powder, baking soda, and salt.
- In another bowl, whisk eggs, yogurt, olive oil, honey, and milk.
- Combine wet and dry ingredients to form a thick batter.
- Fold in chia seeds and flaxseeds if using.
- Pour batter into pan and let rest for 5 minutes.
- Bake for 35–40 minutes until golden and cooked through.
- Cool in pan briefly, then transfer to a rack to cool completely.
