Description

Soft and fluffy vegan herb biscuits made with plant-based cottage cheese, savory herbs, and vegan butter for a tender, flaky, and flavorful homemade treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon dried thyme
  • 1/2 cup vegan butter, cold and cubed
  • 1 cup vegan cottage cheese
  • 3/4 cup unsweetened plant-based milk
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking tray with parchment paper.
  2. In a small bowl, mix the plant-based milk with apple cider vinegar and let sit for 5 minutes to create vegan buttermilk.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, onion powder, thyme, parsley, and chives.
  4. Add the cold vegan butter cubes and cut them into the flour mixture using a pastry cutter or fingertips until crumbly.
  5. Stir in the vegan cottage cheese.
  6. Pour in the vegan buttermilk mixture and olive oil, then stir gently until a soft dough forms.
  7. Transfer the dough to a lightly floured surface and pat into a 1-inch thick rectangle.
  8. Fold the dough over itself once or twice to create flaky layers.
  9. Cut out biscuits using a biscuit cutter or glass and place them on the prepared baking tray with edges slightly touching.
  10. Bake for 14 to 16 minutes until golden brown on top.
  11. Allow the biscuits to cool slightly before serving warm.

Notes

  • Use very cold vegan butter for the flakiest texture.
  • Do not overmix the dough to keep the biscuits soft and fluffy.
  • Fresh herbs provide the best flavor, but dried herbs also work.
  • Store leftovers in an airtight container for up to 5 days refrigerated.
