Description

A classic Turkish Delight (Lokum), a soft and chewy confection flavored with rosewater and optionally filled with nuts, dusted in powdered sugar.


Ingredients

  • 2 cups granulated sugar
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1/2 cup cornstarch
  • 1 teaspoon cream of tartar
  • 1 1/2 cups water (for cornstarch mixture)
  • 1 tablespoon rosewater or orange blossom water
  • 1/2 cup chopped pistachios or walnuts (optional)
  • 1/2 cup powdered sugar
  • 1/4 cup cornstarch (for dusting)

Instructions

  1. Grease and line a square pan, then dust with powdered sugar and cornstarch.
  2. In a saucepan, heat sugar, 1 cup water, and lemon juice until dissolved, then boil without stirring for 15–20 minutes.
  3. In another pan, whisk cornstarch, cream of tartar, and 1 1/2 cups water, cooking until thick.
  4. Slowly pour hot syrup into cornstarch mixture, stirring continuously.
  5. Cook on low heat for 45–60 minutes until thick and glossy.
  6. Stir in rosewater and nuts if using.
  7. Pour into prepared pan and spread evenly.
  8. Let set for 4–6 hours or overnight.
  9. Dust with sugar mixture, cut into cubes, and coat each piece.

  • Cook mixture long enough for proper setting.
  • Use powdered sugar coating to prevent sticking.
