Description
A classic Turkish Delight (Lokum), a soft and chewy confection flavored with rosewater and optionally filled with nuts, dusted in powdered sugar.
Ingredients
- 2 cups granulated sugar
- 1 cup water
- 1 tablespoon lemon juice
- 1/2 cup cornstarch
- 1 teaspoon cream of tartar
- 1 1/2 cups water (for cornstarch mixture)
- 1 tablespoon rosewater or orange blossom water
- 1/2 cup chopped pistachios or walnuts (optional)
- 1/2 cup powdered sugar
- 1/4 cup cornstarch (for dusting)
Instructions
- Grease and line a square pan, then dust with powdered sugar and cornstarch.
- In a saucepan, heat sugar, 1 cup water, and lemon juice until dissolved, then boil without stirring for 15–20 minutes.
- In another pan, whisk cornstarch, cream of tartar, and 1 1/2 cups water, cooking until thick.
- Slowly pour hot syrup into cornstarch mixture, stirring continuously.
- Cook on low heat for 45–60 minutes until thick and glossy.
- Stir in rosewater and nuts if using.
- Pour into prepared pan and spread evenly.
- Let set for 4–6 hours or overnight.
- Dust with sugar mixture, cut into cubes, and coat each piece.
Notes
- Cook mixture long enough for proper setting.
- Use powdered sugar coating to prevent sticking.
- Customize with flavors or food coloring.
- Store at room temperature in airtight container.
