Description
Traditional Chocolate Profiteroles are classic French choux pastry puffs filled with smooth vanilla custard and topped with rich chocolate sauce. Light, airy, and elegant, they offer a perfect balance of crisp pastry, creamy filling, and decadent chocolate.
Ingredients
- 1/2 cup water
- 1/2 cup milk
- 1/2 cup unsalted butter
- 1/2 tsp salt
- 1 cup all-purpose flour
- 4 large eggs
- 2 cups milk (custard)
- 4 egg yolks
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1 tsp vanilla extract
- 4 oz dark chocolate
- 1/2 cup heavy cream
Instructions
- Heat water, milk, butter, and salt in a saucepan until boiling.
- Stir in flour and cook into a dough ball.
- Let cool slightly, then mix in eggs one at a time until smooth.
- Pipe dough onto a baking tray and bake at 400°F (200°C) for 20–25 minutes.
- Cool profiteroles completely before filling.
- Heat milk and whisk into egg yolks, sugar, and cornstarch to make custard.
- Cook until thick, then add vanilla and cool.
- Fill profiteroles with custard.
- Heat cream and pour over chocolate to make sauce.
- Drizzle chocolate sauce over filled profiteroles and serve.
Notes
- Do not open the oven while baking or pastries may collapse.
- Eggs should be added gradually for proper dough texture.
- Custard must be fully cooled before filling.
- Shells can be made ahead and stored separately.
- Best served fresh for crisp texture.
