Description

Traditional Chocolate Profiteroles are classic French choux pastry puffs filled with smooth vanilla custard and topped with rich chocolate sauce. Light, airy, and elegant, they offer a perfect balance of crisp pastry, creamy filling, and decadent chocolate.


Ingredients

  • 1/2 cup water
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • 1/2 tsp salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups milk (custard)
  • 4 egg yolks
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 tsp vanilla extract
  • 4 oz dark chocolate
  • 1/2 cup heavy cream

Instructions

  1. Heat water, milk, butter, and salt in a saucepan until boiling.
  2. Stir in flour and cook into a dough ball.
  3. Let cool slightly, then mix in eggs one at a time until smooth.
  4. Pipe dough onto a baking tray and bake at 400°F (200°C) for 20–25 minutes.
  5. Cool profiteroles completely before filling.
  6. Heat milk and whisk into egg yolks, sugar, and cornstarch to make custard.
  7. Cook until thick, then add vanilla and cool.
  8. Fill profiteroles with custard.
  9. Heat cream and pour over chocolate to make sauce.
  10. Drizzle chocolate sauce over filled profiteroles and serve.

Notes

  • Do not open the oven while baking or pastries may collapse.
  • Eggs should be added gradually for proper dough texture.
  • Custard must be fully cooled before filling.
  • Shells can be made ahead and stored separately.
  • Best served fresh for crisp texture.
