Ingredients
- 1 lb spaghetti
- 1 tablespoon olive oil
- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz), undrained
- 5 oz fresh spinach, roughly chopped
- 1/4 cup chicken broth (optional)
- 1/4 cup grated Parmesan cheese, plus more for serving
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- Salt, to taste
- Freshly ground black pepper, to taste
- Fresh basil leaves, chopped, for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook the spaghetti until al dente according to package instructions. Reserve 1/2 cup pasta water, then drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add chicken pieces and season with salt, black pepper, and Italian seasoning. Cook for 6–8 minutes until golden and fully cooked.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in diced tomatoes with their juices and red pepper flakes if using. Simmer for 4–5 minutes.
- Add chopped spinach and cook until wilted.
- If needed, add chicken broth or reserved pasta water to loosen the sauce.
- Add the cooked spaghetti to the skillet and toss until coated.
- Sprinkle in Parmesan cheese and toss again until melted and combined.
- Taste and adjust seasoning if needed.
- Serve warm topped with extra Parmesan cheese and fresh basil.
