Ingredients
- 1 cup cooked halal turkey sausage, crumbled
- 6 large eggs
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 cup finely chopped bell peppers
- 1/4 cup finely chopped onions
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 180°C (350°F) and grease or line a 12-cup muffin tin.
- Cook turkey sausage in a skillet over medium heat until browned, then set aside.
- In a bowl, whisk eggs and milk until smooth.
- Add flour, baking powder, salt, pepper, and garlic powder. Mix until smooth.
- Fold in sausage, cheese, bell peppers, onions, and parsley.
- Divide mixture evenly into muffin cups, filling 3/4 full.
- Bake for 18–22 minutes until set and lightly golden.
- Cool for 5 minutes, then transfer to a rack. Serve warm or at room temperature.
