Ingredients

  • 1 cup cooked halal turkey sausage, crumbled
  • 6 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup finely chopped bell peppers
  • 1/4 cup finely chopped onions
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 180°C (350°F) and grease or line a 12-cup muffin tin.
  2. Cook turkey sausage in a skillet over medium heat until browned, then set aside.
  3. In a bowl, whisk eggs and milk until smooth.
  4. Add flour, baking powder, salt, pepper, and garlic powder. Mix until smooth.
  5. Fold in sausage, cheese, bell peppers, onions, and parsley.
  6. Divide mixture evenly into muffin cups, filling 3/4 full.
  7. Bake for 18–22 minutes until set and lightly golden.
  8. Cool for 5 minutes, then transfer to a rack. Serve warm or at room temperature.
