Description
A traditional Thai Mango Sweet Sticky Rice made with glutinous rice soaked and steamed, rich coconut milk sauce, and fresh ripe mangoes. This naturally vegan dessert combines creamy, sweet, and tropical flavors in every bite.
Ingredients
- 1 cup glutinous sweet rice
- 1 cup full-fat coconut milk
- 1 tablespoon coconut milk (extra)
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon cornstarch
- 2–3 ripe mangoes
- 1/2 teaspoon sesame seeds (for garnish)
Instructions
- Soak glutinous rice in water for at least 2 hours or overnight, then drain well.
- Steam the rice for 20–30 minutes until tender and fully cooked.
- In a saucepan, heat coconut milk, sugar, and salt until dissolved.
- Reserve half of the coconut mixture for serving.
- Thicken the remaining coconut mixture with cornstarch mixed in coconut milk, then cook until slightly thickened.
- Pour reserved coconut mixture over cooked rice and let it absorb for 15–20 minutes.
- Slice ripe mangoes into pieces.
- Serve sticky rice with mango slices and drizzle thickened coconut sauce on top.
- Garnish with sesame seeds before serving.
