Description

A crispy and cheesy sweet potato quesadilla filled with spiced mashed sweet potatoes and served with a sweet and spicy honey dipping sauce.


Ingredients

  • 2 medium sweet potatoes, roasted and mashed
  • 1 cup shredded mozzarella or cheddar cheese
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large tortillas
  • 2 tablespoons olive oil or butter
  • 3 tablespoons honey
  • 1/2 teaspoon chili flakes
  • 1 teaspoon lime juice
  • Fresh cilantro or parsley (for garnish)
  • Extra chili flakes (optional)

Instructions

  1. Roast sweet potatoes at 200°C (400°F) until soft, then peel and mash.
  2. Mix mashed sweet potatoes with paprika, salt, and black pepper.
  3. Spread sweet potato mixture on half of each tortilla.
  4. Sprinkle cheese over the filling and fold tortillas in half.
  5. Heat oil or butter in a skillet over medium heat.
  6. Cook quesadillas until golden and crispy on one side, then flip and cook until cheese melts.
  7. Mix honey, chili flakes, and lime juice to make the dip.
  8. Slice quesadillas and serve warm with spicy honey dip.
