Description

Ingredients
- 2 medium sweet potatoes, roasted and mashed
- 1 cup shredded mozzarella or cheddar cheese
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large tortillas
- 2 tablespoons olive oil or butter
- 3 tablespoons honey
- 1/2 teaspoon chili flakes
- 1 teaspoon lime juice
- Fresh cilantro or parsley (for garnish)
- Extra chili flakes (optional)
Instructions
- Roast sweet potatoes at 200°C (400°F) until soft, then peel and mash.
- Mix mashed sweet potatoes with paprika, salt, and black pepper.
- Spread sweet potato mixture on half of each tortilla.
- Sprinkle cheese over the filling and fold tortillas in half.
- Heat oil or butter in a skillet over medium heat.
- Cook quesadillas until golden and crispy on one side, then flip and cook until cheese melts.
- Mix honey, chili flakes, and lime juice to make the dip.
- Slice quesadillas and serve warm with spicy honey dip.

- Use freshly roasted sweet potatoes for best flavor.
