Instructions

  1. Preheat the oven to 350°F (175°C). Grease and lightly flour a 9-inch round cake pan or loaf pan.
  2. Cook and mash the sweet potatoes until smooth, then allow them to cool slightly.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, ground ginger, cinnamon, nutmeg, and salt.
  4. In a large mixing bowl, combine the brown sugar, granulated sugar, and vegetable oil. Beat until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract and mashed sweet potatoes.
