Description

Soft and buttery sugar-free German spritz cookies made with almond flour and monk fruit sweetener, finished with a rich chocolate coating for a low-carb indulgent treat.


Ingredients

  • 2 cups finely blanched almond flour
  • 2 tablespoons coconut flour, sifted
  • 1/2 cup powdered monk fruit sweetener
  • 8 tablespoons unsalted butter, softened
  • 2 oz cream cheese, softened
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1 cup sugar-free dark chocolate chips, melted
  • 1 tablespoon coconut oil
  • 1/2 cup sugar-free white chocolate chips, melted
  • Optional: sugar-free sprinkles
  • Optional: flaky sea salt

Instructions

  1. Preheat oven to 160°C (325°F) and line baking sheets with parchment paper.
  2. Beat butter and cream cheese together for about 4 minutes until light and fluffy.
  3. Add monk fruit sweetener, egg, vanilla extract, and almond extract; mix until smooth.
  4. In another bowl, combine almond flour, coconut flour, baking powder, and salt.
  5. Gradually mix dry ingredients into wet ingredients to form a smooth dough.
  6. Transfer dough into a piping bag or cookie press with a star tip.
  7. Pipe desired shapes onto baking sheets.
  8. Refrigerate piped cookies for 15 minutes.
  9. Bake for 11–13 minutes until edges are lightly golden.
  10. Cool completely on baking sheet.
  11. Melt dark chocolate chips with coconut oil and dip half of each cookie.
  12. Drizzle white chocolate over dipped cookies and add optional decorations.
  13. Refrigerate for 15 minutes until chocolate sets.
