Description

Soft and fluffy sugar-free marshmallows made with natural sweeteners, perfect for a light and guilt-free treat.


Ingredients

  • 1 cup cold water, divided
  • 3 tablespoons powdered gelatin
  • 1 cup granulated erythritol or allulose
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1/2 cup powdered erythritol (for dusting)
  • 2 tablespoons cornstarch

Instructions

  1. Line an 8×8-inch pan with parchment paper and lightly grease it.
  2. Pour 1/2 cup cold water into a bowl and sprinkle gelatin over it. Let bloom for 5–10 minutes.
  3. In a saucepan, combine remaining water, erythritol, and salt. Heat until dissolved and gently simmering.
  4. Pour hot syrup into bloomed gelatin while mixing on low speed.
  5. Increase speed to high and beat for 10–12 minutes until thick and glossy.
  6. Add vanilla extract during the final minute of mixing.
  7. Transfer mixture to prepared pan and smooth the top.
  8. Mix powdered erythritol and cornstarch, then dust over the top.
  9. Let set at room temperature for at least 4 hours or overnight.
  10. Remove from pan, cut into cubes, and dust all sides to prevent sticking.

  • Blooming gelatin properly is essential for structure.
  • Do not overheat the sweetener to avoid crystallization.
  • Whip long enough to achieve a fluffy texture.
  • Dust generously to prevent sticking.
