Description
Soft and fluffy sugar-free marshmallows made with natural sweeteners, perfect for a light and guilt-free treat.
Ingredients
- 1 cup cold water, divided
- 3 tablespoons powdered gelatin
- 1 cup granulated erythritol or allulose
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 1/2 cup powdered erythritol (for dusting)
- 2 tablespoons cornstarch
Instructions
- Line an 8×8-inch pan with parchment paper and lightly grease it.
- Pour 1/2 cup cold water into a bowl and sprinkle gelatin over it. Let bloom for 5–10 minutes.
- In a saucepan, combine remaining water, erythritol, and salt. Heat until dissolved and gently simmering.
- Pour hot syrup into bloomed gelatin while mixing on low speed.
- Increase speed to high and beat for 10–12 minutes until thick and glossy.
- Add vanilla extract during the final minute of mixing.
- Transfer mixture to prepared pan and smooth the top.
- Mix powdered erythritol and cornstarch, then dust over the top.
- Let set at room temperature for at least 4 hours or overnight.
- Remove from pan, cut into cubes, and dust all sides to prevent sticking.
Notes
- Blooming gelatin properly is essential for structure.
- Do not overheat the sweetener to avoid crystallization.
- Whip long enough to achieve a fluffy texture.
- Dust generously to prevent sticking.
