Ingredients
- 1 1/2 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar-free sweetener (erythritol or monk fruit)
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
Instructions
- Pour milk and heavy cream into a saucepan and heat over medium heat.
- Once warm, add sugar-free sweetener and stir until dissolved.
- Reduce heat to medium-low and simmer gently for 30–40 minutes, stirring frequently.
- Allow mixture to reduce by half until thick and creamy.
- Remove from heat and stir in butter, vanilla extract, and salt.
- Let cool completely; it will thicken further as it cools.
- Transfer to an airtight container and refrigerate.

- Use finely ground sweetener for a smoother texture.
