Ingredients

  • 2 cups graham cracker crumbs
  • 8 tablespoons unsalted butter, melted
  • 3 packages (8 ounces each) cream cheese, softened
  • 1/2 cup confectioners’ sugar
  • 2 teaspoons vanilla extract
  • 8 ounces whipped topping, thawed
  • 1 package (3 ounces) strawberry gelatin
  • 1/3 cup boiling water
  • 3/4 cup strawberry preserves
  • 1 cup chopped fresh strawberries

  • Extra fresh strawberries for garnish

Instructions

  1. In a medium bowl, mix the graham cracker crumbs and melted butter until evenly combined.
  2. Press the crumb mixture firmly into the bottom of a 9×13-inch dish to form the crust. Refrigerate for 10 minutes.
  3. In a large bowl, beat the softened cream cheese until smooth and creamy.
  4. Add the confectioners’ sugar and vanilla extract and mix until fully combined.
  5. Fold 8 ounces of whipped topping into the cream cheese mixture until light and fluffy.
  6. Spread the cream cheese layer evenly over the chilled crust.
  7. In another bowl, dissolve the strawberry gelatin in boiling water and stir until fully dissolved.
  8. Mix in the strawberry preserves and chopped strawberries.
  9. Allow the strawberry mixture to cool slightly, then spread it carefully over the cream cheese layer.
  10. Top with the remaining whipped topping and spread evenly.
  11. Refrigerate for at least 4 hours until fully set.
  12. Garnish with fresh strawberries before serving.
