Description

These no-bake Strawberry Crunch Cheesecake Bites feature a creamy cheesecake center coated in a buttery strawberry cookie crunch for the perfect bite-sized dessert.

Ingredients

  • Cheesecake Filling:
  • 8 oz full-fat cream cheese, softened
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream, chilled
  • 1/2 cup powdered sugar
  • Crunch Coating:
  • 1 package Golden Oreo cookies, crushed
  • 1 package strawberry gelatin powder
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Prepare the strawberry crunch coating by combining the crushed Golden Oreo cookies and strawberry gelatin powder in a bowl.
  2. Pour in the melted butter and stir until the mixture resembles wet sand.
  3. In a large bowl, beat the softened cream cheese until smooth and fluffy.
  4. Add the powdered sugar and vanilla extract, then mix until creamy and lump-free.
  5. In a separate chilled bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture using a spatula.
  7. Scoop the cheesecake mixture into small bite-sized balls and place them on a parchment-lined baking sheet.
  8. Freeze the cheesecake balls for 20 to 30 minutes until firm enough to handle.
  9. Roll each cheesecake bite in the strawberry crunch coating, pressing gently so the crumbs stick evenly.
  10. Refrigerate the coated cheesecake bites until ready to serve.
  11. Serve chilled for the best flavor and texture.

Notes

  • Freeze-dried strawberries can replace gelatin powder for a more natural strawberry flavor.
  • Vanilla wafers or graham crackers work well instead of Golden Oreos.
  • Mini white chocolate chips can be added to the filling for extra sweetness.
  • Fresh strawberries should be finely chopped and drained before adding to the filling.
  • Store in an airtight container in the refrigerator for up to 3 days.
  • Freeze the cheesecake balls before coating for best freezer storage results.
  • Place parchment paper between layers if stacking the bites.
