Description

Soft and naturally sweet strawberry baked oatmeal cups made with hearty oats, fresh strawberries, and wholesome ingredients for a nutritious grab-and-go breakfast.


Ingredients

  • 2 1/2 cups rolled oats
  • 1 1/2 cups fresh strawberries, chopped
  • 1 cup milk (dairy or plant-based)
  • 2 large eggs
  • 1/3 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 1/2 teaspoon ground cinnamon
  • Extra strawberries for topping

Instructions

  1. Preheat oven to 180°C (350°F) and grease or line a muffin tin.
  2. Mix oats, baking powder, cinnamon, and salt in a bowl.
  3. Whisk milk, eggs, honey or maple syrup, and vanilla in another bowl.
  4. Combine wet and dry ingredients, stirring gently.
  5. Fold in chopped strawberries.
  6. Spoon mixture into muffin cups and top with extra strawberries.
  7. Bake for 25–30 minutes until set and lightly golden.
  8. Cool in pan briefly, then transfer to a rack to cool completely.

Notes
