Description

Stir-Fried Korean Potato Side Dish (Gamja-Bokkeum) is a savory-sweet Korean banchan made with tender potatoes coated in a light soy glaze with garlic, onion, and sesame oil for a comforting everyday side dish.


Ingredients

  • 2 to 3 medium potatoes (about 425 g), peeled and cubed
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 cup water
  • 2 tablespoons soy sauce
  • 1 tablespoon corn syrup or sugar
  • 1 tablespoon toasted sesame oil
  • Pinch of sesame seeds

Instructions

  1. Peel and cut potatoes into even cubes, then rinse under cold water.
  2. Heat olive oil in a pan over medium heat and add potatoes, stirring to coat.
  3. Add garlic and cook until fragrant.
  4. Add onions and cook for 2–3 minutes until softened.
  5. Pour in water, soy sauce, and corn syrup (or sugar), then stir well.
  6. Simmer for about 10 minutes until potatoes are tender and sauce reduces.
  7. Stir occasionally and add a splash of water if needed.
  8. Once cooked, turn off heat and mix in sesame oil.
  9. Sprinkle sesame seeds on top and serve warm.

Notes

  • Waxy potatoes work best for holding shape.
  • Do not over-stir or potatoes may break apart.
  • Adjust sweetness by reducing or increasing sugar.
  • Add chili flakes for a spicy version.
  • Best served fresh but also reheats well.
