Ingredients
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small onion, chopped
- 400 g canned white beans (cannellini), drained and rinsed
- 300 g fresh spinach, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 120 ml vegetable broth
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a skillet over medium heat and sauté onion until soft.
- Add garlic and cook for 1 minute until fragrant.
- Stir in white beans and season with salt, pepper, cumin, and paprika.
- Pour in vegetable broth and simmer for 5 minutes.
- Add spinach gradually and cook until wilted.
- Stir in lemon juice and adjust seasoning if needed.
- Remove from heat and garnish with parsley before serving.
Notes
- Do not overcook spinach to avoid excess moisture.
- Add chili flakes for heat.
- Use kale or chard as substitutes for spinach.
