Description

A simple and nutritious dish combining tender white beans and sautéed spinach with garlic, herbs, and a light savory broth.


Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small onion, chopped
  • 400 g canned white beans (cannellini), drained and rinsed
  • 300 g fresh spinach, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 120 ml vegetable broth
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat and sauté onion until soft.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in white beans and season with salt, pepper, cumin, and paprika.
  4. Pour in vegetable broth and simmer for 5 minutes.
  5. Add spinach gradually and cook until wilted.
  6. Stir in lemon juice and adjust seasoning if needed.
  7. Remove from heat and garnish with parsley before serving.

Notes

  • Do not overcook spinach to avoid excess moisture.
  • Add chili flakes for heat.
  • Use kale or chard as substitutes for spinach.
  • Serve with bread or grains for a complete meal.
