Description

Ingredients
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 large eggs
- 3/4 cup granulated sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 1/2 cups finely grated carrots
- 1/2 cup milk
Instructions
- Preheat oven to 180°C (350°F) and grease an 8-inch baking pan.
- Soak oats in milk for 10 minutes to soften.
- In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs and sugar until pale and slightly fluffy.
- Add oil and vanilla extract, mixing well.
- Stir in grated carrots and soaked oats mixture.
- Gradually fold in dry ingredients until just combined.
- Pour batter into prepared pan and smooth top.
- Bake for 30–35 minutes until a toothpick inserted comes out clean.
- Cool for 10 minutes in pan, then transfer to rack to cool completely.
Notes
- Do not overmix batter to keep cake tender.
- Use fresh grated carrots for best moisture.
- Add nuts or raisins for variation.
- Store at room temperature for 2 days or refrigerate up to 5 days.
- Freeze slices up to 2 months.
- Warm slightly before serving for best texture.
