Description

A soft and moist oatmeal carrot cake made with wholesome oats, fresh carrots, and warm spices for a comforting and lightly sweet treat.


Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely grated carrots
  • 1/2 cup milk

Instructions

  1. Preheat oven to 180°C (350°F) and grease an 8-inch baking pan.
  2. Soak oats in milk for 10 minutes to soften.
  3. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, beat eggs and sugar until pale and slightly fluffy.
  5. Add oil and vanilla extract, mixing well.
  6. Stir in grated carrots and soaked oats mixture.
  7. Gradually fold in dry ingredients until just combined.
  8. Pour batter into prepared pan and smooth top.
  9. Bake for 30–35 minutes until a toothpick inserted comes out clean.
  10. Cool for 10 minutes in pan, then transfer to rack to cool completely.

Notes

  • Do not overmix batter to keep cake tender.
  • Use fresh grated carrots for best moisture.
  • Add nuts or raisins for variation.
  • Store at room temperature for 2 days or refrigerate up to 5 days.
