Description

Soft and tender lemon cookies with a bright citrus flavor, made moist and slightly nutritious with cottage cheese.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/2 cup powdered sugar
  • Optional: 1 to 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, mix cottage cheese, sugar, and softened butter until smooth and creamy.
  3. Add egg, lemon juice, lemon zest, and vanilla extract, and mix well.
  4. In another bowl, whisk flour, baking powder, baking soda, and salt.
  5. Gradually combine dry ingredients with wet mixture to form a soft dough without overmixing.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
  7. Bake for 10–12 minutes until edges are lightly golden and centers remain soft.
  8. Cool on baking sheet briefly, then transfer to a wire rack.
  9. Optional: Mix powdered sugar with lemon juice and drizzle over cooled cookies.
