Ingredients
- 1 cup cottage cheese
- 1/2 cup granulated sugar

Instructions
- Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a bowl, mix cottage cheese, sugar, and softened butter until smooth and creamy.
- Add egg, lemon juice, lemon zest, and vanilla extract, and mix well.
- In another bowl, whisk flour, baking powder, baking soda, and salt.
- Gradually combine dry ingredients with wet mixture to form a soft dough without overmixing.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
- Bake for 10–12 minutes until edges are lightly golden and centers remain soft.
- Cool on baking sheet briefly, then transfer to a wire rack.
- Optional: Mix powdered sugar with lemon juice and drizzle over cooled cookies.
