Ingredients

  • 1.5 to 2 pounds boneless, skinless chicken breasts or chicken thighs
  • 1.5 pounds small Yukon Gold or red potatoes, quartered
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional garnish)

Instructions

  1. Wash the potatoes thoroughly and cut them into bite-sized quarters. If using large chicken breasts, slice them in half for even cooking.
  2. Place the chicken and potatoes into the bottom of the slow cooker in an even layer.
  3. In a medium bowl, whisk together the chicken broth, Parmesan cheese, olive oil, minced garlic, and Italian seasoning.
  4. Pour the Parmesan garlic mixture evenly over the chicken and potatoes.
  5. Season everything with salt and black pepper.
  6. Cover the slow cooker with the lid and cook on LOW for 4 to 6 hours or HIGH for 2 to 3 hours until the chicken is fully cooked and the potatoes are fork-tender.
  7. Carefully transfer the chicken and potatoes to serving plates.
