Description

Sigeumchi-namul is a traditional Korean spinach side dish made with blanched spinach seasoned with garlic, soy sauce, sesame oil, and sesame seeds for a light, nutty, and savory vegetable banchan.


Ingredients

  • 8 ounces fresh spinach, washed
  • 1 garlic clove, minced
  • 1 green onion, chopped
  • 1 1/2 teaspoons soy sauce
  • 1 1/2 teaspoons toasted sesame oil
  • 2 teaspoons toasted sesame seeds
  • 1/4 teaspoon salt (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Bring a large pot of water to a boil.
  2. Blanch spinach for 30–60 seconds until bright green.
  3. Drain and rinse immediately under cold water.
  4. Squeeze out excess water gently and chop into bite-sized pieces.
  5. Transfer spinach to a bowl and add garlic, green onion, soy sauce, sesame oil, sesame seeds, and salt.
  6. Mix gently until evenly seasoned.
  7. Garnish with red pepper flakes if desired and serve.

Notes

  • Do not overcook spinach to preserve color and texture.
  • Rinse in cold water immediately after blanching.
  • Squeeze lightly to avoid making it mushy.
  • Toasted sesame oil gives the best authentic flavor.
  • Tastes even better after resting for a few minutes.
