A fresh and flavorful shrimp sushi bowl with cauliflower rice, tender shrimp, sautéed zucchini, creamy avocado, and a tangy homemade Yum Yum sauce.
Ingredients
- For the bowl:
- 2 cups cauliflower rice
- 1 medium zucchini, sliced
- 8 oz shrimp, peeled and deveined
- 1 avocado, sliced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Yum Yum sauce, for serving
- For the Yum Yum sauce:
- 1 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon + 1 teaspoon powdered monkfruit
- 1 tablespoon rice vinegar
- 1 tablespoon melted butter
- 2 teaspoons sriracha (optional)
- 1 1/2 teaspoons garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Water as needed
Instructions
- Whisk together all Yum Yum sauce ingredients, adding water until smooth and pourable. Set aside.
- Cook cauliflower rice in the microwave according to package directions, then fluff.
- Sauté zucchini in butter over medium heat for 5–7 minutes until tender.
- Toss shrimp with olive oil, garlic powder, paprika, onion powder, salt, and pepper.
- Air fry shrimp at 350°F for 12 minutes, shaking halfway through.
- Divide cauliflower rice into bowls and top with zucchini.
- Add cooked shrimp and sliced avocado.
- Drizzle with Yum Yum sauce and serve immediately.
