Sheet Pan Kofta is a flavorful Mediterranean-style baked dish made with seasoned ground beef mixed with fresh herbs and warm spices, then baked into juicy strips and served with salad and tzatziki in pita bread. It is quick, high in protein, and perfect for easy weeknight dinners.
Ingredients
- 2 pounds lean ground beef
- 1/4 cup fresh mint leaves
- 1/2 cup fresh parsley
- 1 small red onion, roughly chopped
- 3 garlic cloves
- 1 tablespoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon kosher salt
- 1 tablespoon tomato paste
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili flakes
- 1 tablespoon olive oil (for greasing pan)
- 1 large red onion, thinly sliced (salad)
- 1/3 cup chopped parsley (salad)
- 1 cup cherry tomatoes, halved (salad)
- Juice of 1/2 lemon (salad)
- 2 tablespoons olive oil (salad)
- 1/2 cup feta cheese (salad)
- 1/2 teaspoon salt (salad)
- Warm pita bread, for serving
- Tzatziki sauce, for serving
Instructions
- Preheat oven to 425°F (220°C) and grease a sheet pan.
- Pulse mint, parsley, onion, and garlic in a food processor until finely chopped.
- Mix herb mixture with ground beef, spices, tomato paste, and seasonings.
- Press mixture evenly onto sheet pan into a rectangle about 1/2 inch thick.
- Score into 5 long strips.
- Bake for 15 minutes until cooked through.
- Drain excess fat and broil for 1–2 minutes until edges are charred.
- Mix salad ingredients in a bowl.
- Slice kofta and serve in pita with salad and tzatziki.
Notes
- Do not overmix meat to keep kofta tender.
- Broiling at the end adds authentic charred flavor.
- Can substitute lamb, chicken, or turkey for beef.
- Mixture can be prepared ahead and refrigerated overnight.
- Great for meal prep and reheats well.
- Serve with rice or salad for a low-carb option.
