Ingredients
- 1 pound frozen green-lipped mussels on the half shell, thawed
- 4 tablespoons unsalted butter
- 3 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional)
- 1/8 teaspoon black pepper
- 1/8 teaspoon salt (optional)
- Lemon wedges for serving
Instructions
- Preheat oven to 200°C (400°F) and prepare a baking tray.
- Arrange thawed mussels on the tray, shell side down.
- Melt butter in a saucepan over low heat, add garlic and cook briefly until fragrant.
- Remove from heat and stir in parsley, lemon zest, lemon juice, paprika, pepper, and optional red pepper flakes and salt.
- Spoon the garlic butter mixture evenly over each mussel.
- Bake for 8–10 minutes until butter is bubbling and mussels are heated through.
- Garnish with extra parsley and serve with lemon wedges.
