- 2 cups shredded cheddar cheese
- 1 1/2 cups Bisquick or similar baking mix
- Optional: ranch dressing for dipping
- Optional: honey mustard for dipping
- Optional: spicy mustard for dipping
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine sausage, cream cheese, drained Rotel, cheddar cheese, and baking mix.
- Mix thoroughly until all ingredients are evenly combined.
- Scoop mixture into 1-inch balls and roll smooth.
- Place sausage balls on prepared baking sheet, spacing them evenly.
- Bake for 20–25 minutes until golden brown and cooked through.
- Remove from oven and let cool slightly before serving.
Notes

- Do not pre-cook sausage; it cooks fully in the oven.

- Use pepper jack cheese for a spicier variation.
- Mixture can be made ahead and refrigerated before baking.
- Freeze uncooked balls for easy future baking.
