Ingredients

- 1/2 cup cream cheese, softened
- 1/4 cup cheddar cheese, finely shredded

Instructions
- In a medium bowl, mix softened cream cheese and shredded cheddar cheese until smooth.
- Add chopped green onions and diced red bell pepper, stirring until evenly combined.
- Lay out half of the crackers on a clean surface.
- Spread a moderate layer of the cheese mixture onto each cracker.
- Top with another cracker and gently press to form sandwiches.
- Refrigerate for 20–30 minutes to firm up the filling.
- Serve chilled or at room temperature.
