Ingredients
- 160 g all-purpose flour
- 100 ml warm water
- 1 g active dry yeast
- 1 tsp olive oil
- 1/4 tsp salt
- A pinch of sugar
- 1 pizza dough (prepared)
- 1/3 cup shredded mozzarella cheese
- 1/4 cup crumbled gorgonzola or blue cheese
- 1/4 cup shredded fontina or taleggio cheese
- 2 tbsp grated parmesan cheese
- 1 tbsp olive oil
- Fresh basil or parsley (optional)
Instructions
- Mix warm water, sugar, and yeast; let sit until foamy.
- Combine flour and salt, then add yeast mixture and olive oil to form dough.
- Knead until smooth, then let rise until doubled in size.
- Preheat oven to 475°F (245°C) with a pizza stone or tray inside.
- Roll dough into a thin 10–12 inch circle.
- Transfer to parchment or pizza peel.
- Top with mozzarella, gorgonzola, fontina, and parmesan.
- Drizzle with olive oil.
- Bake for 8–12 minutes until crust is crispy and cheese is melted.
- Garnish with herbs, slice, and serve.
Notes
- Use a very hot oven for best crisp crust.
- Do not overload with cheese to avoid sogginess.
- Blue cheese can replace gorgonzola if needed.
