Ingredients
- 2 ripe plantains (yellow with black spots)
- 2 large eggs

Instructions
- Peel the plantains by cutting off the ends and slicing along the skin, then remove the peel.
- Slice the plantains diagonally into 1/2-inch thick pieces.
- Heat 2 tablespoons of oil in a pan over medium heat.
- Fry plantain slices for 2–3 minutes per side until golden brown and caramelized.
- Remove plantains and place on paper towels; lightly sprinkle with salt.
