Description

Ingredients

  • 2 ripe plantains (yellow with black spots)
  • 2 large eggs
  • 3 tablespoons vegetable oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)

Instructions

  1. Peel the plantains by cutting off the ends and slicing along the skin, then remove the peel.
  2. Slice the plantains diagonally into 1/2-inch thick pieces.
  3. Heat 2 tablespoons of oil in a pan over medium heat.
  4. Fry plantain slices for 2–3 minutes per side until golden brown and caramelized.
  5. Remove plantains and place on paper towels; lightly sprinkle with salt.
  6. Add remaining oil if needed and crack eggs into the pan.
  7. Cook eggs to desired doneness and season with salt, pepper, and paprika.
  8. Serve fried eggs alongside warm plantains and enjoy immediately.
