Description

Ingredients

  • 4 slices soft white or whole wheat bread
  • 1 cup fresh pineapple slices (thinly sliced or crushed)
  • 4 tablespoons cream cheese, softened
  • 2 tablespoons mayonnaise
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, softened

Instructions

  1. Prepare pineapple by slicing thinly or crushing slightly, then pat dry to remove excess moisture.
  2. In a bowl, mix cream cheese, mayonnaise, powdered sugar, and vanilla extract until smooth.
  3. Spread butter on one side of each bread slice.
  4. Spread the cream cheese mixture on the unbuttered side of each slice.
  5. Place pineapple evenly on two slices.
  6. Top with remaining slices, cream side down, to form sandwiches.
  7. Serve immediately or toast lightly in a pan until golden.
  8. Cut diagonally and serve.
