Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 200 g cream cheese, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple, drained
- 1/4 cup pineapple juice
- 1/2 cup milk
Instructions
- Preheat oven to 170°C (340°F) and grease a loaf or bundt pan.
- Whisk together flour, baking powder, and salt in a bowl.
- Beat butter and cream cheese until smooth and creamy.
- Add sugar gradually and beat until light and fluffy.
- Add eggs one at a time, mixing well after each, then stir in vanilla.
- Alternate adding dry ingredients and milk, mixing gently until combined.
- Fold in crushed pineapple and pineapple juice.
- Pour batter into prepared pan and smooth top.
- Bake for 60–70 minutes until a toothpick comes out clean.
- Cool in pan for 10–15 minutes, then transfer to a rack to cool completely.
