Ingredients
- 2 ripe pears, peeled, cored, and diced
- 1 cup pitted dates, finely chopped
- 1 cup walnuts, chopped (plus 2 tablespoons extra for garnish)
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup packed brown sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup honey (for drizzling)
Instructions
- Preheat oven to 350°F (175°C) and prepare a 9-inch cake pan.
- In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, beat butter and brown sugar until light and fluffy (3–4 minutes).
- Add eggs one at a time, mixing well after each, then stir in vanilla.
- Gradually add dry ingredients and mix gently until just combined.
- Fold in pears, dates, and walnuts evenly.
- Pour batter into pan and smooth the top.
- Bake for 40–45 minutes until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a rack.
- Drizzle with honey and sprinkle extra walnuts before serving.
