Description
Peanut Butter Stuffed Dates Covered in Chocolate are a simple no-bake treat made with soft Medjool dates filled with creamy peanut butter and coated in smooth melted chocolate. They taste like a natural caramel candy bar and are perfect for quick snacks or dessert platters.
Ingredients
- 20 large Medjool dates, pitted
- 1/2 cup creamy peanut butter
- 1 cup semi-sweet chocolate chips
- 1 teaspoon coconut oil
- 1/4 teaspoon flaky sea salt (optional)
- 2 tablespoons crushed peanuts (optional)
Instructions
- Slice each date lengthwise and remove the pit if needed.
- Fill each date with about 1 to 1 1/2 teaspoons of peanut butter and gently close.
- Place stuffed dates on a parchment-lined tray and freeze for 15 minutes.
- Melt chocolate chips with coconut oil in short microwave intervals, stirring until smooth.
- Dip each stuffed date into melted chocolate and let excess drip off.
- Place coated dates back on the tray and sprinkle with sea salt or crushed peanuts if desired.
- Chill in the refrigerator for 20–30 minutes until chocolate is set.
Notes
- Medjool dates work best because they are soft and large.
- Freezing helps the dates hold their shape during dipping.
- Dark chocolate can be used for a richer flavor.
- Add extra toppings like coconut or chopped nuts for variation.
- Store chilled for the best texture and firmness.
