Description

Ingredients

  • 20 large Medjool dates, pitted
  • 1/2 cup creamy peanut butter
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil
  • 1/4 teaspoon flaky sea salt (optional)
  • 2 tablespoons crushed peanuts (optional)

Instructions

  1. Slice each date lengthwise and remove the pit if needed.
  2. Fill each date with about 1 to 1 1/2 teaspoons of peanut butter and gently close.
  3. Place stuffed dates on a parchment-lined tray and freeze for 15 minutes.
  4. Melt chocolate chips with coconut oil in short microwave intervals, stirring until smooth.
  5. Dip each stuffed date into melted chocolate and let excess drip off.
  6. Place coated dates back on the tray and sprinkle with sea salt or crushed peanuts if desired.
  7. Chill in the refrigerator for 20–30 minutes until chocolate is set.
