Description

Peach Pie is a classic summer dessert featuring a flaky buttery crust filled with sweet, juicy peaches and warm spices. Perfect for gatherings, holidays, or weekend baking, this homemade pie is delicious served warm or chilled.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup unsalted butter, cold and cubed
  • 6 to 8 tablespoons ice water
  • 6 cups fresh peaches, peeled and sliced
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 tablespoon milk
  • 1 tablespoon coarse sugar

Instructions

  1. In a large bowl, combine flour, salt, and sugar for the crust.
  2. Add cold butter and cut into the flour mixture until crumbly.
  3. Gradually add ice water, mixing until the dough comes together.
  4. Divide dough into two discs, wrap, and refrigerate for at least 1 hour.
  5. Preheat the oven to 425°F (220°C).
  6. In another bowl, combine peaches, granulated sugar, brown sugar, cornstarch, lemon juice, vanilla extract, cinnamon, nutmeg, and salt.
  7. Roll out one dough disc and place it into a 9-inch pie dish.
  8. Pour the peach filling into the crust and spread evenly.
  9. Roll out the second dough disc and place it over the filling. Seal and crimp the edges.
  10. Mix the beaten egg with milk and brush over the top crust. Sprinkle with coarse sugar.
  11. Cut small slits in the top crust to allow steam to escape.
  12. Bake for 20 minutes at 425°F (220°C), then reduce the temperature to 375°F (190°C) and bake for 35 to 40 more minutes until golden brown and bubbling.
  13. Allow the pie to cool for at least 2 hours before slicing.

Notes

  • Freestone peaches work best because they are easy to slice.
  • Allow the pie to cool completely before slicing to help the filling set.
  • Frozen peaches can be used if thawed and drained well.
  • Cover crust edges with foil if they brown too quickly.
  • Serve with vanilla ice cream or whipped cream for extra flavor.
