Description
A wholesome and naturally sweet oatmeal carrot cake made with simple ingredients, perfect for breakfast or a light dessert.
Ingredients
- 1 cup rolled oats
- 1/2 cup oat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 large eggs
- 1/3 cup honey or maple syrup
- 1/2 cup plain yogurt
- 1 teaspoon vanilla extract
- 1 cup finely grated carrots
- 1/4 cup chopped walnuts or raisins (optional)
Instructions
- Preheat oven to 180°C (350°F) and grease or line a baking dish.
- In a bowl, mix oats, oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk eggs, honey (or maple syrup), yogurt, and vanilla until smooth.
- Combine wet and dry ingredients gently without overmixing.
- Fold in grated carrots and optional walnuts or raisins.
- Pour batter into prepared dish and spread evenly.
- Bake for 25–30 minutes until a toothpick comes out clean.
- Cool for 10 minutes, then transfer to a rack to cool completely before slicing.
Notes
- Avoid overmixing to keep the cake light and soft.
- Use plant-based yogurt for a dairy-free version.
- Quick oats can be used but will change texture slightly.
- Natural sweetness comes from carrots and honey/maple syrup.
