Description

A rustic no-knead bread infused with sweet-tart cranberries and fragrant herbs, finished with a rich garlic butter glaze for a flavorful homemade loaf.


Ingredients

  • 3 cups (360 g) all-purpose or bread flour
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon instant yeast
  • 1 1/2 cups warm water
  • 1 cup dried cranberries
  • 2 tablespoons fresh herbs (rosemary, thyme, or sage), chopped
  • 1 tablespoon olive oil (optional)
  • 3 tablespoons unsalted butter, melted
  • 2 garlic cloves, minced
  • 1 teaspoon fresh parsley, chopped
  • Pinch of salt

Instructions

  1. Mix flour, salt, yeast, cranberries, and herbs in a bowl.
  2. Add warm water and mix into a sticky dough.
  3. Cover and let rest at room temperature for 12–18 hours.
  4. Turn dough onto floured surface and shape into a ball.
  5. Let rest for 30–40 minutes.
  6. Preheat oven with a Dutch oven inside to 230°C.
  7. Transfer dough into hot pot and cover.
  8. Bake for 30 minutes covered, then 10–15 minutes uncovered.
  9. Prepare garlic butter by melting butter and mixing with garlic, parsley, and salt.
  10. Brush bread with garlic butter and cool before slicing.
