Ingredients
- 1/2 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup whole milk
- 2 medium apples, peeled, cored, and diced
- 1/3 cup light brown sugar, packed
- 1 1/2 teaspoons ground cinnamon
- 1/2 cup powdered sugar
- 1 to 2 tablespoons milk
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
- In a small bowl, combine the diced apples, brown sugar, and cinnamon. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Add the dry ingredients to the butter mixture alternately with the milk, mixing just until combined.
- Spread half of the batter into the prepared loaf pan.
- Spoon half of the cinnamon apple mixture over the batter.
- Add the remaining batter and top with the remaining apples.
- Gently swirl the layers with a knife.
- Bake for 50 to 55 minutes or until a toothpick inserted into the center comes out clean.
- Cool the bread in the pan for 15 minutes, then transfer to a wire rack.
- Whisk together the powdered sugar, milk, and vanilla extract for the glaze.
- Drizzle the glaze over the cooled bread before slicing and serving.
Notes
- Use a mix of sweet and tart apples for the best flavor balance.
- Do not overmix the batter to keep the bread soft and tender.
- Chopped walnuts or pecans add a delicious crunchy texture.
- The bread tastes even better the next day after the flavors settle.
- Allow the loaf to cool before glazing so the glaze sets properly.
- A 1:1 gluten-free flour blend can be used if needed.
- Store slices individually wrapped for easy freezing and reheating.
