Ingredients

  • 2 cups cooked black beans, drained and rinsed
  • 1 cup cooked pinto beans, drained and rinsed
  • 1 cup Greek yogurt or sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions

Instructions

  1. In a large bowl, mash black beans and pinto beans until mostly smooth with some texture.
  2. Add Greek yogurt or sour cream and mix until creamy.
  3. Stir in salsa, lime juice, cumin, chili powder, garlic powder, onion powder, salt, and black pepper until well combined.
  4. Fold in half of the shredded cheese.

  6. Top with remaining cheese, diced tomatoes, cilantro, and green onions.
