Ingredients
- 2 cups cooked black beans, drained and rinsed
- 1 cup cooked pinto beans, drained and rinsed
- 1 cup Greek yogurt or sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 1 tablespoon lime juice
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
Instructions
- In a large bowl, mash black beans and pinto beans until mostly smooth with some texture.
- Add Greek yogurt or sour cream and mix until creamy.
- Stir in salsa, lime juice, cumin, chili powder, garlic powder, onion powder, salt, and black pepper until well combined.
- Fold in half of the shredded cheese.
- Transfer mixture to a serving dish and spread evenly.
- Top with remaining cheese, diced tomatoes, cilantro, and green onions.
- Serve immediately or refrigerate until ready to serve.
