Ingredients
- 3 medium zucchini, grated
- 1 teaspoon salt
- 3 eggs
- 3/4 cup feta cheese, crumbled
- 1/2 cup shredded mozzarella or kasseri
- 1/4 cup grated Parmesan or Pecorino
- 3 tablespoons extra-virgin olive oil
- 2 green onions, chopped
- 3 tablespoons fresh parsley, chopped
- 2 tablespoons fresh dill or mint, chopped
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- Optional pinch of nutmeg or Aleppo pepper
Instructions
- Grate zucchini, sprinkle with salt, and let sit for 10 minutes.
- Squeeze out excess moisture using a towel.
- Preheat oven to 190°C (375°F) and grease a baking dish.
- Whisk eggs and olive oil in a bowl.
- Add zucchini, cheeses, green onions, herbs, oregano, pepper, and optional spices.
- Mix until well combined.
- Transfer mixture to baking dish or muffin tins and smooth the top.
- Bake for 30–35 minutes until golden and set.
- Let rest for 5–10 minutes before serving.

- Drain zucchini well to avoid excess moisture.
