Ingredients

  • 1 1/4 pounds lean ground chicken
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup red onion, finely diced and squeezed dry
  • 3 garlic cloves, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh dill, chopped
  • 1 1/2 teaspoons dried oregano
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg (optional)
  • 1/3 cup breadcrumbs or panko breadcrumbs (optional)
  • 1/2 cup finely chopped spinach (optional)
  • 1/4 cup chopped sun-dried tomatoes (optional)
  • 1/4 cup roasted red peppers, chopped and drained (optional)
  • Burger buns or pita bread for serving

Instructions

  1. In a large mixing bowl, combine the ground chicken, feta cheese, red onion, garlic, parsley, dill, oregano, lemon juice, salt, and black pepper.
  2. Mix gently until just combined, being careful not to overmix.
  3. If the mixture feels too soft or wet, mix in the egg and breadcrumbs to help bind the patties.
  4. Fold in any optional add-ins such as spinach, sun-dried tomatoes, or roasted red peppers if desired.
  5. Divide the mixture into four equal portions and shape into burger patties about 1/2-inch thick.
  6. Press a small dent into the center of each patty to help them cook evenly.
  7. Heat a lightly oiled skillet or grill pan over medium heat.
  8. Cook the patties for 5 to 6 minutes per side until golden brown and fully cooked through. The internal temperature should reach 165°F (74°C).
  9. Transfer the burgers to a plate and let them rest for 3 to 5 minutes.
  10. Serve in burger buns or pita bread with tzatziki sauce, cucumber, tomatoes, lettuce, and red onion slices.

  • Ground turkey can be substituted for ground chicken.
