Ingredients
- 4 boneless skinless chicken breasts
- 2 large sweet potatoes, peeled and diced
- 1 pound Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil, divided
- 2 teaspoons smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons Dijon mustard
- 2 tablespoons maple syrup
- 1 tablespoon lemon juice
- 2 garlic cloves, grated
- 1 tablespoon olive oil (for sauce)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet.
- Toss sweet potatoes and Brussels sprouts with olive oil, smoked paprika, cayenne, salt, and pepper.
- Spread vegetables on the pan and roast for 15 minutes.
- Whisk Dijon mustard, maple syrup, lemon juice, garlic, olive oil, salt, and pepper to make sauce.
- Season chicken with salt and pepper and brush with half the sauce.
- Remove vegetables from oven and push them to the sides of the pan.
- Place chicken in the center and brush with remaining sauce.
- Roast for 15–18 minutes until chicken reaches 165°F internal temperature.
- Garnish with fresh parsley and serve warm.

- Do not overcrowd the pan or vegetables will steam instead of roast.
