Description

This Magical 30-Minute Dorito Casserole is a cheesy, crunchy, and comforting dinner made with seasoned ground beef, creamy layers, crunchy tortilla chips, and melted cheese. It’s the perfect quick family meal for busy weeknights or casual gatherings.

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can diced tomatoes with green chilies (10 ounces)
  • 1 can cream of chicken soup (10.5 ounces)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag nacho cheese tortilla chips, lightly crushed (about 9 ounces)
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: chopped green onions, sliced black olives, diced tomatoes, jalapeño slices, fresh cilantro

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add diced onion and cook for 3 minutes until softened.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
  5. Add taco seasoning, salt, black pepper, and water. Stir and simmer for 2–3 minutes.
  6. Mix in diced tomatoes with green chilies and cook briefly until combined.
  7. In a separate bowl, combine cream of chicken soup and sour cream until smooth.
  8. Spread half of the crushed tortilla chips into the baking dish.
  9. Layer half of the beef mixture over the chips.
  10. Spread half of the creamy soup mixture over the beef.
  11. Sprinkle with 1 cup cheddar cheese.
  12. Repeat the layers with remaining chips, beef mixture, creamy mixture, and cheeses.
  13. Top with mozzarella cheese.
  14. Bake uncovered for 15–20 minutes until the cheese is melted and bubbly.
  15. Let the casserole rest for 5 minutes before serving.
  16. Add optional toppings and serve warm.

Notes

  • Bake immediately after assembling to keep the chips crunchy.
  • Nacho cheese tortilla chips provide the best flavor for this casserole.
  • Customize the casserole with beans, corn, or jalapeños for extra texture and spice.
  • Leftovers reheat very well for easy lunches or dinners.
  • Allow the casserole to rest before serving so the layers set properly.
