Ingredients
- 2 large chicken breasts, diced
- 2 tbsp olive oil
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a medium baking dish.
- Heat olive oil in a large skillet over medium heat.
- Add the diced chicken breasts and cook for 5–6 minutes until lightly browned and mostly cooked through.
- Add the sliced mushrooms and cook for another 3–4 minutes until softened.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the spinach and cook for 1–2 minutes until wilted.
- Pour in the heavy cream and season with Italian seasoning, salt, and black pepper.
- Simmer the mixture for 2–3 minutes until the sauce thickens slightly.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Sprinkle mozzarella cheese and Parmesan cheese evenly over the top.
- Bake uncovered for 20–25 minutes until the cheese is melted, bubbly, and lightly golden.
- Let the casserole cool for a few minutes before serving warm.
