Ingredients

  • 2 slices thick bread (sourdough, whole grain, or country bread)
  • 2 large eggs
  • 1 ripe avocado
  • 1 tablespoon butter or olive oil
  • 2 slices cheddar cheese
  • 1 small tomato, sliced
  • 1/4 cup baby spinach
  • 2 tablespoons mayonnaise or yogurt-based sauce
  • Salt, to taste
  • Black pepper, to taste
  • Optional: hot sauce, paprika, chili flakes, dried oregano

Instructions

  1. Toast the bread slices until golden and crisp.
