Description
A smooth and creamy Italian limoncello custard with a bright citrus flavor, perfect for filling desserts or enjoying on its own.
Ingredients
- 2 cups whole milk
- 4 large egg yolks
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon lemon zest
- 1/4 cup limoncello liqueur
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
Instructions
- Heat the milk with lemon zest in a saucepan over medium heat until steaming but not boiling.
- In a bowl, whisk egg yolks and sugar until pale and slightly thickened.
- Add cornstarch and whisk until smooth.
- Slowly pour warm milk into the egg mixture while whisking constantly.
- Return the mixture to the saucepan.
- Cook over medium heat, whisking continuously, until thickened (5–7 minutes).
- Remove from heat and stir in limoncello, vanilla extract, and butter until smooth.
- Transfer to a bowl and cover with plastic wrap touching the surface.
- Cool to room temperature, then refrigerate until fully chilled.
Notes
- Whisk constantly to prevent lumps.
- Do not boil the milk to avoid curdling.
- Press plastic wrap directly on the surface to prevent a skin.
- For a non-alcoholic version, substitute limoncello with lemon juice and sugar syrup.
- Whisk gently after chilling if the custard thickens too much.
