Description

Light chocolate and raspberry mousse is a delicate and airy dessert that combines rich dark chocolate with the fresh, tangy sweetness of raspberries for a perfectly balanced treat.


Ingredients

  • 150 grams dark chocolate
  • 3 eggs
  • 20 grams butter
  • 125 grams fresh raspberries
  • 1 tablespoon powdered sugar
  • A pinch of salt
  • A few mint leaves (for decoration)

Instructions

  1. Melt the dark chocolate with butter using a double boiler or microwave, stirring until smooth. Let cool slightly.
  2. Separate egg whites from yolks. Beat whites with a pinch of salt until stiff peaks form.
  3. Mix egg yolks into the cooled melted chocolate until smooth.
  4. Gently fold the egg whites into the chocolate mixture in batches to keep it airy.
  5. Mash half of the raspberries with powdered sugar to create a coulis.
  6. Layer chocolate mousse, raspberry coulis, and whole raspberries in serving glasses.
  7. Repeat layers until filled.
  8. Refrigerate for at least 4 hours to set.
  9. Decorate with remaining raspberries and mint leaves before serving.
