Ingredients
- 150 grams dark chocolate
- 3 eggs
- 20 grams butter
- 125 grams fresh raspberries
- 1 tablespoon powdered sugar
- A pinch of salt
- A few mint leaves (for decoration)
Instructions
- Melt the dark chocolate with butter using a double boiler or microwave, stirring until smooth. Let cool slightly.
- Separate egg whites from yolks. Beat whites with a pinch of salt until stiff peaks form.
- Mix egg yolks into the cooled melted chocolate until smooth.
- Gently fold the egg whites into the chocolate mixture in batches to keep it airy.
- Mash half of the raspberries with powdered sugar to create a coulis.
- Layer chocolate mousse, raspberry coulis, and whole raspberries in serving glasses.
- Repeat layers until filled.
- Refrigerate for at least 4 hours to set.
- Decorate with remaining raspberries and mint leaves before serving.
