Description

Keto Dinner Rolls are soft, fluffy, low-carb bread rolls made with almond flour, mozzarella cheese, cream cheese, and eggs. They are a perfect gluten-free and keto-friendly alternative to traditional dinner rolls, ideal for meals, sandwiches, or snacks.


Ingredients

  • 1 1/4 cups almond flour
  • 2 ounces cream cheese, softened
  • 1 1/2 cups shredded mozzarella cheese
  • 1 teaspoon baking powder
  • 1 large egg
  • 1/4 cup full-fat sour cream
  • 1/4 teaspoon xanthan gum
  • Pinch of salt
  • 2 tablespoons melted butter
  • Optional toppings: garlic powder, sesame seeds, everything bagel seasoning, fresh herbs

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Microwave cream cheese and mozzarella in 30-second intervals until fully melted and smooth.
  3. Transfer melted cheese to a mixing bowl.
  4. Add almond flour, baking powder, egg, sour cream, xanthan gum, and salt.
  5. Mix until a thick dough forms.
  6. Lightly wet hands and divide dough into 8 equal portions.
  7. Shape into rolls and place on baking sheet.
  8. Bake for 20 minutes until golden brown.
  9. Brush with melted butter immediately after baking.
  10. Let cool slightly before serving warm.

Notes

  • Dough will be sticky due to melted cheese; wet hands help with shaping.
  • Freshly shredded mozzarella gives a smoother texture.
  • Do not substitute coconut flour directly as it will change texture.
