Description

Italian Tartufo is a luxurious frozen dessert made with layered vanilla and chocolate ice cream surrounding a sweet cherry center, all coated in rich chocolate ganache. This elegant truffle-like treat is perfect for celebrations and special occasions.


Ingredients

  • 1 vanilla ice cream
  • 1 chocolate ice cream
  • 4 maraschino cherries
  • 1/4 cup cherry juice or cherry syrup
  • 8 ounces dark chocolate, finely chopped
  • 1/2 cup heavy cream
  • Cocoa powder (optional, for garnish)
  • Extra cherries (optional, for garnish)
  • Chocolate shavings (optional, for garnish)

Instructions

  1. Place maraschino cherries in a bowl and soak them in cherry juice or syrup for at least 30 minutes.
  2. Scoop vanilla ice cream into a bowl, place a cherry in the center, and cover with more vanilla ice cream to form a ball. Repeat for all cherries.
  3. Freeze vanilla ice cream balls for about 1 hour until firm.
  4. Remove from freezer and quickly coat each ball with chocolate ice cream, shaping again into smooth rounds.
  5. Freeze again for 2 hours until completely firm.
  6. Heat heavy cream in a saucepan until it begins to simmer, then pour over chopped dark chocolate.
  7. Let sit for 1 minute, then stir until smooth and glossy to create ganache.
  8. Dip frozen ice cream balls into ganache, coating completely.
  9. Place on a parchment-lined tray and freeze for at least 1 hour until set.
  10. Let sit at room temperature for 5–10 minutes before serving. Slice and garnish if desired.

  • Pistachio, coffee, or hazelnut ice cream can be used for variations.
